Mystic Valley Farm is located outside of Rogue River, Oregon in the Evans Valley. Trinity Scott and her husband relocated from Napa, California to their Mystic Valley Farm a few years ago. Trinity found that the location is ideal for growing medicinal herbs and various types of flowers that she sells at several growers markets in Southern Oregon. She also has had success drying many of the cut flowers and selling them as wreaths and arrangements on her website as well.
Trinity has developed a line of Mystic Valley Farm Herbal Teas that utilize many of the medicinal herbs on her farm.

Mystic Valley Farm – Herbal Tea Blends
Where Trinity has found the most success is in her herbal tea line that targets health ailments that many of us have. Each tea blend has dried herbs that she combines to get the most impact out of the tea to assist in staying healthy.
Stay Well Tea
With a blend of Peppermint, Chamomile, Elderberry, Calendula and Lemongrass to assist with immune support and tastes great!
Deep Sleep Tea
Prepare yourself for bedtime with the delicate mix of Lemon Balm, Lemongrass, Passion Flower, Skullcap, Lavender and Rose Petal.
Yummy Tummy Tea
This tea blend helps relieve an upset stomach and aids in digestion with Peppermint, Chamomile, Licorice Root, Marshmallow Root and Ginger.
Big Brain Tea

Chamomile, Dandelion Root, Hawthorne and Cinnamon Chips give this tea a bright cinnamon finish that isn’t overpowering. This herbal combination targets high blood pressure and cholesterol issues while delivering a tea that you can benefit from daily.
Making the move from Wine to Tea
Trinity and her husband worked in Napa Valley in the wine industry and she explains in the video interview how winemaking and creating tea blends overlap. From the care taken growing grapes compared to the care of the earth that grows the herbs.
The blending of wine to make the perfect bottle can take many attempts to get the right flavor profile, tannins and feel on the palate. This process aligns with what goes into creating the teas, researching what herb and root benefits will target an ailment she is aiming to help. Blending herbal ingredients to get the right flavor profile while balancing the benefits of the herbs can be challenging and may take several tastings to find what has the best aroma, taste and mouthfeel.
Building a Tea Blend
Having a booth at the growers and crafters markets she has found that she has had great feedback from customers on what ailments they may be struggling with. This gives Trinity a path to researching herbalism to see what may benefit the specific need for a particular health need. In the video, she explains that the need arose for an herbal blend that could assist with lowering blood pressure and cholesterol. Though feedback from customers at the markets she came up with the blend for Happy Heart Tea.
As the teas names suggest, she has created nice blends of beneficial herbs that work to assist an ailment. An example of this is Yummy Tummy, in the interview Trinity she explained how licorice root and marshmallow root have a mucilaginous property. Both roots, when mixed with water for a long time, will make the water viscous. This property can help with digestion, and both roots work well as an anti inflammatory. Plus, these herbs have a sweetness that goes well to balance the peppermint and chamomile in the tea.
At themysticvalleyfarm.com Trinity has listed, under the ingredient list for each tea blend, what the beneficial properties are for each herb she uses in that recipe. This is a great source of reference for herbs you may not be familiar with.
Sourcing the Best Ingredients
Trinity has researched the best herbs she can find, she explains that many sources are cheap but not always the best quality. Her three preferred sources for herbs are Starwest Botanicals located in Sacramento, Mountain Rose Herbs in Eugene and Oshala Farm a local farm in the Applegate, Oregon. All three of the botanical sources not only sell herbs that Trinity uses but have lines of other products as well.
In talking with Trinity about the herbs, I compared the want for freshness of the herbs she sources to dry culinary herbs, the same applies. There are culinary herb and spice companies that will sell to restaurants in bulk and if you compare different brands or even different batches of herbs of the same brand they can look dull in color and may have a muted flavor. As she also points out, you really want the freshest ingredients possible for anything you are making.
Culinary Uses for her Herbal Tea Blends
Trinity and I have discussed uses her tea blends could play in recipes and I am working on a couple recipes that we may feature at one of the growers markets. When the recipes have been tested the recipes will be featured on both websites. Look for both sweet and savory recipes that you can make at home!
