Building flavors in dishes is a key element in making a great dish. It doesn’t matter if it is a steak on the grill or building flavors in a wok when making an Asian dish.
Building Flavors
There are many ways to build flavors, with meats you can go as basic as salt and pepper before grilling or as far as marinating. Either way the flavors increase in the final meat coming off the grill.
This Mexican Citrus Marinade is not different. The ingredients in this recipe play off each other, the two citrus flavors, garlic and shallot and the mix of Mexican spices with the chipotle pepper and cilantro.
Patiently Marinating
When allowed to marinate overnight will penetrate the chicken and provide a citrus, spiced flavor in the grilled chicken.

Citrus Marinated Mexican Chicken (GF)

- 5 lbs Chicken Breast or Thigh Boneless Skinless
- 6 ea Garlic Cloves minced
- 1 ea Shallot minced
- 2 ea Lime zest
- ¼ cup Lime Juice
- 3 oz Orange Juice
- 2 tbsp Agave Syrup or Honey
- 1 tsp Ancho Powder
- 1 ea Chipotle Pepper in Adobo
- ¼ tsp Cumin
- ½ tsp Coriander
- 1 tbsp Mexican Oregano crushed
- ¼ cup Cilantro Chopped
- ½ tsp Kosher Salt
- ¼ cup Vegetable Oil
Instructions
- Trim the chicken breast or thigh from fat. If using breast, I would recommend splitting the breast in half to make them thinner, this will allow the marinade to penetrate better and give a nice char on the meat when cooking.
- In a bowl, combine the minced garlic, shallot, lime zest.
- Add in the lime juice, orange juice, and agave syrup
- Add the spices to the bowl.
- Add the chopped cilantro
- Drizzle in the oil while whisking to emulsify the marinade.
- Marinate chicken overnight.
- Grill chicken to get the char and smokiness from the grill.
- Chop or shred for desired use. Makes great tacos.
Notes
- I recommend using Agave syrup if you have it, Agave will provide a sweetness similar to honey or table sugar but has a lower glycemic index which is helpful if you are diabetic.
- Agave instead of Honey will be a mellow alternative to the bold Honey flavor.
- Whether you use Agave or Honey both will work in this recipe.
We made tacos with this chicken. We used soft white corn tortillas warmed on the grill.
