Easy Pickled Red Onion recipe.This recipe can be altered to your liking, you can adjust the ingredients to make sweeter or more acidic. Adding other spices will a a twist to the flavor. Use on your favorite salad, sandwich or panini.

- 4 ea Medium Red Onions
- 1 cup Apple Juice
- 2 cup Red Wine Vinegar
- 1 ½ cup Sugar
Instructions
- Slice red onions about ⅛" thick. The thickness of the slices should be consistent to allow the marinade to evenly pickle the onions. I used a mandolin but you can cut by hand, they can be half rings or whole rings.
- Mix together the apple juice, red wine vinegar and sugar. Use a whisk to combine the ingredients and whisk to dissolve the sugar.
- Once the sugar has dissolved pour over the sliced onions. Use a container that will allow the marinade to cover the onions.
- Best if marinated overnight but can be used after a few hours.
- Variations on the pickling marinade – adding peppercorns, coriander or chili de arbol or jalapeno slices.
