Irish Cream Origin

Believe it or not, Irish Cream was not invented by an Irishman. Tom Jago, was a London marketer and liquor executive. who was under contract with an Irish distribution company to create a new liquor for the international market.

In 1971, Jago headed a team that created Bailey’s Irish Cream. 6 years later Jago created Malibu Rum as a way to simplify making a Pina Colada. Once the popularity of Malibu Rum took off the distilling was moved to Barbados.

Necessity Is the Mother of Invention

Bailey’s Irish Cream began being produced in Ireland. Due to a struggling distillery and the abundance of cream from a local dairy due to the increasing popularity of semi-skimmed milk, Irish cream was created. The original recipe for Irish Cream actually included Nesquik but today, the chocolate ingredient in Bailey’s is a proprietary cocoa extract process. Sorry, no more Nesquik in your Irish cream.

In 1974, Bailey’s was introduced to the public. The name was taken from a restaurant, although the owner gave permission for it to be used, the signature on the bottle was inspired by the Bailey’s Hotel in London.

Today, Bailey’s Irish Cream has over a dozen flavor varieties. Because of marketing to international countries, the largest sales of the Irish cream are the United Kingdom, Canada and the United States.

Irish Cream Liqueur is a EU Heritage product that must be made in Ireland to be labeled with the name. Today the English government gives the same status to Irish cream producers since the UK has left the European Union. Since Irish Cream industry was given that status, it places it in the same protected status as champagne or scotch.

Equipment

Recipe Multiplier

  • 1 ½ cup Heavy Cream
  • ½ cup 2% Milk
  • ¼ cup Irish Whiskey
  • ½ cup Strong Brewed Coffee or Espresso
  • ¼ cup Irish Cream
  • ¼ cup Granulated Sugar
  • 1 tbsp Gelatin

Instructions

Dissolving the Gelatin

  • In a sauce pot, add the milk and heat to warm.
    Remove from the heat.
  • Add the gelatin to the milk and whisk to combine.
    Let sit to dissolve the gelatin.

Heating the Cream Mixture

  • In a second sauce pot, add the remaining ingredients.
    Heat over a medium heat until the cream begins to form bubbles around the edge. Just before simmering.
  • Remove from the heat.
  • Using a whisk, add in the milk and gelatin mixture and whisk to combine.
  • Once combined, ladle the panna cotta into rocks glasses, irish coffee glasses or ramekins.
  • Refrigerate overnight to allow the gelatin to set.
  • Serve with whipped cream.
