The flavors of Morocco in this delicious marinade. Skewered and grilled to give the meat a nice char.
Marinade would work well on beef too!
Suggested marinade time - 6 to 24 hours.

Recipe Multiplier

  • 1 lb Diced Lamb
  • 3 ea Garlic Cloves - minced
  • ¼ cup Yellow Onion - minced
  • 3 tbsp Parsley - minced
  • 3 tbsp Cilantro - minced
  • 2 tsp Cumin
  • 2 tsp Dried Aleppo Pepper - ground of flakes
  • 1 ½ tsp Paprika
  • 1 tsp Black Pepper
  • ½ tsp Cinnamon
  • ½ tsp Kosher Salt
  • 3 tbsp Lemon Juice
  • ¼ cup Olive Oil

Instructions

Diced Lamb

  • If necessary, dice the lamb into 1"-1½" pieces

Assembling the Marinde

  • Mince the garlic, onion, cilantro and parsley.
  • In a bowl, add the garlic, onion, cilantro, parsley.
  • Add the dry spice ingredients.
  • Squeeze the lemons and add to the bowl.
  • Add the olive oil & mix to combine the marinade ingredients.
  • Add the diced lamb and mix to combine.
  • Marinate for 6 - 24 hours.

  • Skewer the Kebabs and get ready to grill!

Grilling the Lamb Kebabs

  • Grill the Kebabs over a medium high heat to develop char as it cooks.
    Turn the Kebabs to get an even cook.

Notes

Substitution for Aleppo Pepper - 4 parts sweet paprika and one part cayenne chile powder.  This will give the hints of sweetness with a kick of spice.
