Smoked Rosemary Prime RIb recipe has detailed instructions on making the spice rub. Smoke at a high heat for 15 – 20 minutes to adhere the crust. After the initial high heat, turn down to 300° to allow the meat to slow roast for hours.

Doing a low and slow cook on large pieces of meat brings the temperature up slowly to give an even temperature/color throughout the meat.

What Exactly is Au Jus

Au Jus is French term meaning, “with juice”. Au Jus is traditionally considered to be the drippings from a roasted piece of meat. Served with roasts, specifically prime rib, it’s a classic pairing.

Au Jus can be made with pan drippings. Although, in most cases utilizing the pan drippings solely as the sauce is most likely not going to provide enough for your guests. As an alternative, making Au Jus by adding beef broth or stock to the roasting pan is an option. Doing so will fortify the flavor and volume while the roast cooks. The down side is through the roasting process the broth will reduce decreasing the volume.

Making an Au Jus on the stove top is a great way to ensure there is enough Au Jus for everyone. This recipe gives some nice added flavor to compliment the Smoked Rosemary Prime Rib. As an added boost of flavor, try adding a sprig of rosemary as you make the Au Jus.

Au Jus Ingredients

  • cup Red Wine
  • 2 cups Beef Broth - Plus Pan Drippings if available
  • 1 tbsp Worcestershire Sauce
  • ½ tsp Granulated Onion
  • ¼ tsp Granulated Garlic
  • ¼ tsp Kosher Salt - To Taste
  • ¼ tsp Black Pepper

Instructions

Making the Au Jus

  • In a saucepan, add the Red WIne and reduce by half over a medium high heat.
  • Once reduced by half, add the Beef Broth and pan drippings if available.
  • Add the Worcestershire Sauce and bring back to a boil.
  • Add the Granulated Garlic, Onion and Black Pepper.
  • Taste for balance of seasoning, adjust with additional seasoning and/or Kosher Salt
  • Serve with the Smoked Rosemary Prime Rib and Enjoy!
