Culinary Influences

Looking back on my 10 plus years working in Chinese restaurants, going in my knowledge was limited. I had come from a classically trained French technique background. The desire to learn more about Asian cuisines was piqued by the influence of a chef I had at culinary school, Chef Robert Danhi.

Chef Danhi’s wife is from Malaysia and his curriculum of classes he taught had ingredients or techniques of Asian cuisine laced throughout. Learning about ingredients and flavor pairings were what sparked me to want to learn more.

Chef Danhi has since written two cookbooks, Southeast Asian Flavors (James Beard Finalist) and Easy Thai Cooking. He has also hosted Taste of Vietnam cooking show.

My understanding of Asian cuisine only scratches the surface of the knowledge Chef Danhi has accumulated over the years. I encourage you to pick up Chef Danhi’s books, they have great food discussions of Asian culture and ingredients. Plus you can create the amazing recipes he shares.

I look forward to reconnecting with Chef Danhi in the future. I hope to continue to learn from his travels and hopefully join in on his exploration of Southeast Asia.

Recipe Multiplier

  • 1 cup Soy Sauce
  • cup White Vinegar
  • ¼ cup Chili Oil
  • 2 tbsp Sugar
  • 2 tbsp Scallions - sliced
  • 2 tsp Ginger - minced
  • 2 tsp Garlic - minced

Instructions

Combining the Dipping Sauce

  • Mince the Garlic and GInger and slice the Green Onions.
  • In a mixing bowl, combine the Sugar and Vinegar.
    Whisk until the sugar is dissolved.
  • Add the remaining ingredients and mix to combine.
  • If desired, you can heat the ingredients in a small sauce pan to dissolve the sugar and bring out the oils in the scallions, garlic and ginger. But this step is not necessary.
  • Store in a sealed container in the refrigerator for later use.
